Meet the exceptional team behind our champagne bar franchise. Our team of seasoned sommeliers and dedicated hospitality professionals is committed to curating an unforgettable champagne selection and unparalleled experiences.
Mrs. Bourgeon has 22 years of experience in managing restaurants, wine bars, and champagne bars. From 2001 to 2009, she was the Manager of Le Saint Barbe Bar & Restaurant in France, becoming the co-owner in 2003. She then became owner of Le Makan, a restaurant offering refined dishes in Cagnes sur Mer, France.
In 2012, Claire bought La Cave 5, a wine bar offering tapas style food, and then purchased L’Eclat, a champagne bar and restaurant, during 2014. Both restaurants were highly successful until their eventual sale. Finally, in 2019, Claire moved to the US with her family and became co-owner of Rollbotto Sushi in Florida, which has since been sold successfully. She holds a Bachelor’s Degree in Business, a Master’s Degree in Marketing, and is in the process of obtaining a French Wine certificate and Champagne certificate.
